Ingredients

Serves 6-8

  • 1 (2 to 3-pound) HeartBrand Certified Akaushi Beef® Tri-Tip Steak
  • 2 tablespoons olive oil
  • 2 tablespoons HeartBrand Seasoning (or a blend of salt, pepper, and garlic powder)
  • 6–8 high-quality sandwich rolls (such as ciabatta or brioche)
  • 1/2 cup garlic aioli or horseradish cream
  • 1 large red onion, thinly sliced
  • 2 cups fresh arugula
  • Optional: Provolone or Swiss cheese slices

Preparation

  1. Season and Prep: Remove the HeartBrand Tri-Tip from the refrigerator 30 minutes before cooking. Rub with olive oil and season generously on all sides.
  2. Sear and Roast: Preheat your oven to 400°F. In a large oven-safe skillet, sear the tri-tip over medium-high heat for 3–4 minutes per side until a dark crust forms. Transfer the skillet to the oven and roast for 15–20 minutes, or until the internal temperature reaches 130°F for medium-rare.
  3. The Crucial Rest: Transfer the meat to a cutting board and let it rest for at least 15 minutes. This ensures the juices stay in the meat rather than on the board.
  4. Slice Against the Grain: Identify the direction of the muscle fibers and slice the tri-tip into very thin strips against the grain. This is essential for a tender sandwich bite.
  5. Assemble: Lightly toast your rolls. Spread a layer of garlic aioli or horseradish cream on both sides. Stack a generous portion of sliced Wagyu tri-tip, followed by cheese (if using), red onions, and a handful of peppery arugula.

Serve: Serve warm or at room temperature. These sandwiches are perfect for a self-serve game-day station.
