  • 2 HeartBrand® Certified Akaushi Beef® Tomahawk Steaks (40–44 oz. each)
  • Salt and freshly cracked black pepper
  • 2 tbsp olive oil
  • 4 cloves garlic, smashed
  • 2 sprigs fresh rosemary
  • 2 sprigs thyme
  • Optional: finishing salt or compound butter for serving

Preparation

  1. Remove tomahawks from the refrigerator about 45 minutes before cooking. Pat dry with paper towels and season generously with salt and black pepper.
  2. Preheat your grill or cast-iron skillet to high heat. Brush steaks lightly with olive oil and sear for 3–4 minutes per side, creating a rich, caramelized crust.
  3. Reduce the heat to medium. Add garlic, rosemary, and thyme to the pan or grill surface to infuse flavor.
  4. Move steaks to indirect heat or lower oven (around 375°F) and cook until internal temperature reaches 125°F for medium-rare or 135°F for medium. Use a meat thermometer for accuracy.
  5. Transfer steaks to a cutting board, tent loosely with foil, and rest 10–15 minutes. Slice against the grain and serve family-style with your favorite sides.
