- 1 pound HeartBrand® Wagyu Smoked Sausage, sliced into rounds
- 1 tablespoon olive oil
- 1 large yellow onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 celery stalks, diced
- 3 cloves garlic, minced
- 1 1/2 cups long-grain rice (uncooked)
- 1 (14.5-ounce) can diced tomatoes
- 3 cups chicken broth (or beef broth for deeper flavor)
- 2 teaspoons Cajun seasoning (plus more to taste)
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 2 bay leaves
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
- Optional: hot sauce for serving
Preparation
- Brown the Sausage: Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add sliced smoked sausage and cook 3–4 minutes until browned. Remove to a plate.
- Sauté the Veggies: In the same pot, add onion, bell peppers, and celery. Cook 6–8 minutes until softened. Add garlic and cook 1 minute more until fragrant.
- Build the Base: Stir in rice, Cajun seasoning, smoked paprika, thyme, and bay leaves. Cook 1 minute to toast the rice lightly and bloom the spices.
- Simmer: Add diced tomatoes (with juices) and broth. Stir well, scraping any browned bits from the bottom of the pot.
- Add Sausage + Cook: Return sausage to the pot. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 20–25 minutes, or until the rice is tender and most of the liquid is absorbed.
- Rest: Remove from heat and let stand covered for 5 minutes. Fluff with a fork.
Finish and Serve: Taste and adjust seasoning. Garnish with chopped parsley and serve with hot sauce if desired.
