Ingredients
Serves 4-6
- 1 (2-pound) HeartBrand Certified Akaushi Beef® Chuck Roast
- 1 tablespoon olive oil
- 1 large onion, sliced
- 2 carrots, peeled and roughly chopped
- 2 celery stalks, roughly chopped
- 3 cloves garlic, minced
- 1 cup beef broth (or red wine for a richer flavor)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
Preparation
- Prepare the Roast: Pat the HeartBrand Wagyu chuck roast dry with paper towels. Season generously on all sides with salt and freshly ground black pepper.
- Sear the Roast: Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Sear the chuck roast on all sides until a deep brown crust forms. This step is crucial for developing rich flavor.
- Add to Slow Cooker: Transfer the seared roast to your slow cooker.
- Sauté Vegetables: In the same skillet, add the sliced onion, chopped carrots, and celery. Sauté for 5-7 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Deglaze and Combine: Pour the beef broth (or red wine) into the skillet, scraping up any browned bits from the bottom of the pan. Stir in the Worcestershire sauce, dried thyme, and bay leaf. Bring to a simmer.
- Slow Cook: Pour the vegetable and liquid mixture over the chuck roast in the slow cooker. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the roast is fork-tender. The internal temperature should reach at least 145°F for optimal food safety, but for a tender chuck roast, it will likely be higher.
- Rest and Serve: Once cooked, carefully remove the roast from the slow cooker and let it rest for at least 10-15 minutes before shredding or slicing. This allows the juices to redistribute, ensuring a more tender and flavorful result.
- Garnish: Garnish with fresh chopped parsley before serving. You can serve the roast with the braised vegetables and pan juices from the slow cooker.
