This simple but flavorful one-pot dish features delicious Certified Akaushi Beef smoked sausage and a rainbow of crispy veggies. It can be prepared on the grill or in the oven.

Ingredients
Serves 8
- 1 Certified Akaushi Beef and pork smoked sausage, cut into half-inch rounds
- 2 green bell peppers, cut into large chunks
- 2 yellow bell peppers, cut into large chunks
- 2 red bell peppers, cut into large chunks
- 2 zucchinis, halved and cut into large chunks
- 1 medium red onion, cut into large chunks
- 2- 3 medium sweet potatoes, peeled and cut into large chunks
- 2 medium-sized broccoli crowns, cut into pieces
- 20 or so brussels sprouts, halved
- 6 whole/large rainbow carrots, peeled, halved and cut into 2-inch long chunks
- 1 cup grape tomatoes
- 2 teaspoons minced garlic
- 1/2 cup olive oil (could be less or more, but you want your ingredients to be fully covered)
- 2 teaspoons fresh ground pepper
- 1 teaspoon pink Himalayan salt
- Juice from half a lemon
- 2-3 tablespoons seasoning salt, like Fully Loaded Rub

Preparation
- Preheat your oven or grill to 350 degrees F.
- Place all the chopped vegetables and Certified Akaushi Beef smoked sausage into a large bowl. Add the olive oil and seasonings. Using your hands, mix to coat everything.
- Spread your mixture on a sheet pan of your choice. Sprinkle the fresh lemon juice over the entire pan.
- Bake or grill at 350 degrees F for about 45 minutes or until vegetables are tender. Serve immediately and enjoy!
