Certified Akaushi Beef™ Chili Con Carne


Thick, hearty and perfect for a crowd, this bean-free chili con carne is packed with delicious ingredients and intense flavors.

Serves 6 people

2 pounds Certified Akaushi ground beef

1 white onion, diced

5 fresh garlic cloves, minced

1 tablespoon dried chilis, chopped

1 green bell pepper, diced

1 box (16 ounces) fresh mushrooms, sliced

1 can (16 ounces) tomato paste

5 fresh basil leaves, chopped

1 teaspoon coriander

2 tablespoons chili powder

1/2 teaspoon black pepper

1 1/2 teaspoons salt

1 teaspoon cayenne powder (optional)

1 can (28 ounces) crushed tomatoes (I prefer fire-roasted)

3 cups water



In a large pot or Dutch oven, brown the ground beef. Once fully cooked, drain beef and return to pot.


Using a large spoon, push all the beef to one side of pot. Add onion, garlic, chilis and bell pepper. Sautee until they become aromatic and the onions are slightly translucent, about 5 minutes.


Stir in mushrooms, tomato paste, basil and seasonings. Mix well.


Add crushed tomatoes (including liquid) and water. Stir well, reduce heat to low, cover with lid and allow to simmer for at least one hour. Remove from heat, serve and enjoy with your favorite toppings! (My suggestions: sour cream, green onions, chives, cilantro, shredded cheese, diced avocado, croutons and sliced jalapenos!)
